Prime is the highest quality meat grade given by the department of agriculture in the United States. This meat quality grade is given based on the marling of the meat. (flecks of fat within the meat)  Less than two percent of all beef produced in the United States is graded prime.  Jimmy P's Butcher Shop and Deli features a few prime cuts of beef.
